Right from the start, the EAT SMART BUSINESS-CONCEPT for Florida relied on individually compiled »BOWLS«
Guests walk through a salad bar style area offering (step-by-step) a many varieties of fresh vegetables and choose from.
Step 2 (Vegetables):
In the second step, the guest chooses his fresh vegetables:
• Green Salad • Mushrooms • Peppers • Onions • Carrots • Zucchini • Broccoli • Kale • Spinach • etc.
Step 3 (Protein):
In the third step, the customer decides between various uncooked protein and carbohydrate side dishes or ingredients such as;
• Beef • Bacon • Chicken • Shrimp • Pork • Tofu • Scallops • Egg
Step 4 (Sauces):
And finally, in the fourth step, the customer selects his special sauce from 12 types. Amongst other things:

The carbohydrates are wheat, pasta, lo mein, white and brown rice, cauliflower and broccoli rice, and quinoa. There are around a dozen sauces, including teriyaki, plum, barbecue and curry sauce.
